Throughout my years of baking, I've tried dozens of chocolate chip cookie recipes and they have always fallen short. Call it perfectionism or call it an obsessive sweet tooth disorder, I've never managed to get the right texture and taste until I stumbled upon this recipe. Follow along for some of the best cookies I have ever had (and trust me, I've had too many to count). This perfection of a cookie is ooey gooey in the middle and chewy on the edges with a toffee flavor all your friends and family will be left wondering at. Oh and even if you hate baking, you'll want to keep making these after they disappear in about 10 seconds!
Ingredients:
14 tablespoons unsalted butter
3/4 cup (5 1/4 oz) brown sugar- light or dark will work
1/2 cup (3 1/2 oz) granulated white sugar
2 teaspoons vanilla extract
1 teaspoon sea salt
1 large egg and 1 large yolk
1 3/4 (8 1/2 oz) cup all-purpose flour
1/2 teaspoon baking soda
1 3/4 cup (7 1/2 oz) semi-sweet or bitter-sweet chocolate chips
1. Pre-heat the oven to 375 degrees F, line a cookie sheet with parchment paper
2. Melt 10 tablespoons of butter in a saucepan over medium to low heat, stirring constantly until browned (this is what gives the cookies a toffee flavor). This should take about 7-8 minutes. See the first picture below.
3. Transfer the browned butter to a large mixing bowl and add in the remaining 4 tablespoons of butter. Let the butter melt together.
4. Now whisk in the brown sugar, granulated white sugar, vanilla extract, and salt until incorporated. Your mixture should resemble the second picture below!
5. Add in the egg and egg yolk
6. Now you're going to whisk the mixture for 30 seconds, then let it stand for 3 minutes. Repeat this process 3 times. In the end, you'll have a caramel-like consistency that will give your cookies a gooey texture and an amazing flavor. See the 3rd picture for reference on how your mixture should look at this stage.
8. Now create your flour mixture by sifting together the all-purpose flour and baking soda.
7. Slowly add dry ingredients to the wet by whisking in the flour mixture in parts (about 3 parts). Stir everything together until just combined.
8. Now for the exciting part! Fold in the chocolate chips. At this stage, you can add white chocolate chips or nuts (pecans or walnuts work best). Get creative! This is a great cookie dough base that you can change to your liking. Your dough should look like the 4th picture below.
9. Now let your dough stand at least 10-20 minutes. Pop it in the refrigerator to speed up this process!
10. Use a small ice cream scooper or your clean hands to roll the dough into 1 inch size balls that resemble the 5th picture below.
11. Pop the cookie sheet into the oven for 12-15 minutes or until you can see that the edges of your cookies are turning into a darker brown color (see the last picture below).
12. Let your cookies stand for a few minutes (if you can resist the temptation) and voila! You've just made the perfect chocolate chip cookie, enjoy!
